My favorite way to fix possum..Skin possum, remove glands and entrails. Scrape clean..scald in boiling water.Rub inside and out with salt and pepper. Stuff with chestnuts, apple sauce and bread crumbs. Cover with slices of sweet potaotes..one cup boiling water. 1/2 cup lemon juice..Bake in butter and baste often until tender. I will fix it for you and ship for your coming home celebration from hospital..cause I like you:D :D No trouble. I will just stop and pick one up off road.:D Bonnie

Hi Chris...I'm from South Texas - near San Antonio. Anybody who lives north of Austin is a Yankee to us down here.:D Some folks around here do eat Armadillo. I think I'd eat one of those before I would a possum. They're greasy! Barf! But I betcha Bonnie knows how to cook one though. There are three coons on my patio every evening eating the cat food. They're fatter 'n the cats.. Skunks come up regularly to eat the cat food too.. So, ya'll just let me know which you prefer and I'll blast one for yah.. Wrap 'em up and have 'em on your front porch by FEDEX the next day..

Thanks Janie - You really do live in pretty country-all Texas type kidding aside. My Daughter lives in Austin with her husband, and her in-laws have a farm right across from the LBJ farm out near Fredricksburg. One of my favorite places to visit. I'm really not that excited about possum nor Armadillo, but it makes a good story. Now a frying pan full of Quail or a Pheasant retreived by my bird dogs, that's another story - and maybe a platefull of Bonnie's bisquits and gravey. Now we're cooking - look out cholesterol, here we come !Chris

Coon..Cut up..boil in water with a little salt..until tender..Place in shallow pan with a little water..sprinkle with a little sage..add one cup of broth..Place sweet potatoes around coon..Bake for 20 minutes.. Make a bread dressing..and place around..this will soak up the grease.:D :D Send one to Chris..:D Bonnie
