Can't swing it today.:( Though...I promise to post my mustard crusted corned beef recipe soon! It is fantastic! Starting it out in the crock pot. Last half hour in oven for the mustard/horseradish crust! Your family will be lookin' for more!

Ok...you will need to plan ahead! 6-7AM is your start time!

4+LB corned beef brisket. I would go with a larger cut. Does shrink with cooking.

1/2c chopped onion
2 cloves of garlic minced
2 bay leaves

Place brisket in Crockpot. Barley cover with water. Add above ingredients and cook on low for 10-12 hours.

Remove cooked brisket from Crockpot. Cool for at least 15 mins. Preheat oven to 375. Coat shallow cooking pan with pam or similar. Next, 4-5 slices of white bread. Process in food processor or blender until fine - add 2tbs of course ground pepper. Put aside. Combine 1/4 mayo, 3tbs prepared horseradish, 2 tbs spicy brown mustard. Pat beef dry. slather the roast evenly with prepared mayo combo. Coat beef with the crumbs. Spray top of roast light with cooking spray. Cook uncovered for 10 minutes. Cooking times may vary. I have found usually lengthen.

I have a second/third grade class of special education students. We made corned beef and cabbage yesterday in an electric roaster at school. Some of the students are from cultures where they never would have food like this. They love it! It was a fun day. Roberta:) :) :)
 
Gina, I was abed, too. Got suddenly sick Sat. instant flu? But I DID have a dr visit last Tuesday and that's where we get these things. Ugh

lots better today.

I copied your recipe and will send it to my daughter for her husband to make. She has decided to give up cooking but he's a great cook and this sounds just like his cuppa tea. Tks.
 
I've never eaten corned beef, although I have eaten plenty of brisket, cooked long and slow in a huge pit, but I think that was another thread a while back. I didn't realize that bacon came from an animal. I thought it came from the store!

We went out to eat at a place called Baccaili's (now that's a good Irish name, right?). I had chicken fried chicken, mashed potatoes and GREEN beans!

I heard something yesterday on the radio that I had never heard before. They said that traditionally, Irish Catholics wear green and Irish Protestants (they also called them Scotch Irish) wear orange on St. Patrick's Day. They compared it to the flag - green for the Catholics, orange for the Protestants, and white for peace.

What an interesting post Lisa. May be a few points that need clarification though....

First of all nobody in Ireland actually eats corned beef and cabbage on St Patrick's Day any more than they would eat it any other day of the year. Somebody obviously dreamed up this idea on your side of the pond...could it be a marketing ploy on the part of corned beef merchants or cabbage growers?

We do have a favourite local dish called Cabbage and Bacon. The Bacon, which does come from the store, is fried on the pan and then the shredded cabbage which has been previously boiled, is cooked in the bacon oil. It's very tasty, but because we have a high incidence of heart disease in Ireland we now use vegetable oil instead. I suppose we could drop a few Lipitor tablets in as a precaution but I've never tried that.

Baccaili's is not a very common name round these parts. O'Baccaili's maybe but still doesn't sound Irish....more like Italian I would have thought. As for Chicken fried Chicken, isn't that a Texas delicacy? The potatoes and green beans are very Irish and very suitable for March 17th.

As for the Green and Orange and the white in the middle, well, that's too complicated to start commenting on with a St Patrick's Day hangover. Suffice to say that it probably sounded like a good idea at the time.

Ohhhhh, by the way, if there are any piggies in the Katy/Houston area, best not to use the 'bacon' word in their presence....you might hurt their feelings.
 
Someone told me you folks didn't find anything special in it, couldn't remember who though. Wonder where it all did start. Something for me to do I guess.

My roots are English (mostly), but my husband's are Irish (surname is Cochran). Being a Texan who was raised on high salt and fat country cooking with a whole lot of Tex Mex thrown in, I have difficulty embracing the bland English food. I've never eaten a lot of Irish food (other than Irish stew), but I do like Bailey's. Does that count?

I'm not sure what kind of name Baccaili is actually. It does sound Irish, but the owners are Asian. Most things on the menu are traditional country cooking.

AND ... just when I thought no one was gonna say they fry their cabbage ... here comes our favorite Irishman. I always fry bacon, then cook the cabbage in the bacon grease. BUT wait... I don?t boil the cabbage.. I just slice it up and throw ?er in. lol And don't forget the cornbread!! It's a must, must must!! And new taters! :)

Ann, hope you feel better. I am still fevering. Did you take the flu shot? I did. Dr. wants me to avoid crowded spaces (in which) jury duty is one of them. I got this new variety after being sneezed on by the guy next to me.

Under regular circumstances I can avoid situations like that. Heck, my sister was in the hospital. They put her on the peds floor because of overcrowding. I had to pass on the visit. It's all about protection. Doc wrote a letter about my risks. To remove me from duty. They don't seem thrilled about it. I am too darn sick to worry about it now!
 
Gina, I did have the flu shot and try to stay out of places where I might pick up a bug. I was telling myself that I didn't go anywhere but once last week - the dr and the store. Viola, it hit me - the Dr's office! well, DUH, that's where sick people are.:rolleyes: :( The flu shot has protected me for years and I believe that it has helped me with whatever I have had this week.

Take care of yourself. I know you have such cold weather. We have been lucky with warmth for a few days now and that certainly helps. I think we all just need a healthy dose of sunshine.

That's all it takes. One well visit to the Dr. during flu season! Glad you were not hit hard.

My GP just called and confirmed that I have strain B. Get so scared with fever and the valve. Plan to take it very easy. Just doing the dishes felt like pushing it! I can't beleive the flu shot did not protect me better:mad:

Speaking of sunshine...we are to be down in FL (Palm Coast) end of next week. I debate.....do I want to fly after coming off the flu? Maybe I will wear a face mask!:eek:
 
Gina, I flew to Fl when we had the reunion and I prayed for the pilot of each plane, plus that no passenger would pass anything along to me, healthwise. I was lucky there, but alas home is where you mostly find the germs.

I was in Belfast for Paddy's, Lot's of beer, guinness, music and craic. :p

I live about 15/20 miles from Bushmills, the place where the Whiskey is distilled. It's called Bushmills Distillery, funny enough :rolleyes:

They sponsor the Gaelic Football Team, I used to play for.
Can't say I could stomach a feed of it nowadays. Would chance the odd Jameson's though :D
