Hey guys, one of my hobbies or should I say my true obsession is cooking in chili cook offs. My wife and I travel all over the country and compete in these crazy events. We have also competed in the world championships. Yeah, the one you see on the Food Network. On February 28, there will be the 1st ever Rhode Island State Chili Cook-off. My whole family is gonna be there competing. If any of you guys are in the area and would like to experience something unique let me know. From what I've heard some of the best chili cooks in the world will be competing including a few former world champs. Added bonus you get to meet me.

If you come to Middletown, Kentucky, then I'd attend. We just moved to Louisville in an area called Middletown. Anyway, nothing to do with RI. However, I'd love to attend a chili cook-off someday.

We'll be making chili for a church party on Super Bowl night. I don't want to ask for a secret recipe, but if you have a knock-out simple chili recipe you could share, I'd love that! If not, no problem. Never hurts to ask.

I decided I would share. It ain't heart healthy so I wont post it there.
Simple Red Chili


3# ground chuck as lean as possible. Or stew beef cutting the cubes into 1/4s
1 can Rotell brand Tomatoes
1 Can Bush’s Chili Beans (you pick the heat)
1 Can Chicken Broth
1Can Beef Broth
Red Tabasco hot sauce
Green Tabasco hot sauce.
Worcestershire sauce.
Jalapeño Peppers. Depends on how hot you want it.
4-5 teaspoons Garlic Powder
4-5 teaspoons Onion Powder
2 Tablespoons Hot chili Powder
3 Tablespoons Medium Chili Powder
4 Tablespoons Mild Chili Powder.
¼ teaspoon white pepper or more.
½ teaspoon of oregano Mexican Oregano preferred but not needed.
½ Cajun Season Salt.
6-8 teaspoons Cumin ( this is the most important part. People never use enough.)
¼ teaspoon black pepper.
Salt to taste.
Apple cider vinegar.
Beef Bullion
Lime
brown sugar
Mix all of the dry powders together. In to a bowl save for the salt.

Brown the meat and drain off as much grease as possible.
In a heavy pot add the Chicken and Beef broth, and bring to a boil.
Add 4 Tablespoons of your chili blend to the broth and mix. Add the beef and the can of tomatoes.
Simmer for about 1 hour. Add water to keep meat covered.
Add 5 Tablespoons of the chili blend to the pot along with 1 teaspoon each of Red and Green Tobasco sauce, and 1 teaspoon of the vinegar. Vinegar is the greatest tool a cook can have.
Add 1 cube of beef bullion
Continue to simmer for 1 hour.
Add the Chili beans and salt to taste.
Cook for 20 minutes, then let sit.
30 minutes before you serve it. Bring to a boil and add the rest of the chili blend to taste.
Squeze in the juice of 1/2 lime
and add 1/2 -1 teaspoons brown sugar.

If making a bigger batch you will need to double everything and still add extra chili powder and cumin. Ground meat loves to soak up the flavor and hide it.

That is a cross between one of my old competition recipes and a homestyle recipe. In competition we don't use the tomatoes we use a small can of sauce and we can't add beans

I'd love to visit with you at the cook-off, but it looks like that's the week I'm scheduled to have my AVR. I don't have a date yet, but the surgeon is aiming for the last week in February. If I'm still in the hospital (Rhode Island Hospital), I send my husband--he's the biggest chili fan in our household, and I'll ask him to look for you.

Who is sponsoring the cook-off? Middletown is right next to Newport, RI, and most of these things take place in Newport. My daughter was married this summer and the reception was held at the Atlantic Beach Club--the beach in front of the club is in Newport, while the building is actually in Middletown!

Regardless, wish I was around to show you my beautiful state, but right now I'm very anxious to get this over with and get on with the rest of my life. If you've never been in RI before, be sure to visit the historic college hill portion of Providence and downtown Newport areas. A drive along Ocean Drive in Newport is also time well spent. Enjoy your visit and good luck in the competition.

I cooked Terlingua along time ago. I cook for a different group now. I just got back from Rhode Island. Took whole family up there. Out of 5 of us 4 made the finals table. My wife, my son and daughter, and myself. I came in second place lost 1st by 2 points. Also was the baby's first airplane flight. And mine since surgery. The whole pacemaker thing is kinda scary. It took longer to get patted down. I have found that TSA at different airports are stricter than others. BWI almost is scary as to how lazy they are.
