I love them all...clams, soft-shell clams, razor clams, oysters, cockles, scungilli (conch), jellyfish, calamari (squid), pulpo (octopus - best I ever had was in Cozumel, sweet and tender), mussels (caution: they go bad quickly at buffets), any kind of crab (especially soft-shells), and lobsters, of course, Maine or Southern Spiny. If it has crawled in the sea, I've considered it for my plate.

Except nudibranches. They're not edible. Sea urchin eggs are edible, but they're nasty.

Not to mention the lovely, tasty fishes...

To me, the less preparation, the better.

Best wishes,

I love sea urchin roe (called Uni at sushi bars). It is only nasty when it gets too old. I used to eat at a sushi bar in Los Angeles that served live sea urchin roe. They would cut a sea urchin open and serve the roe in the shell (the tentacles would still be moving). The flavor is amazingly fresh.
On the other hand, I have had Uni in sushi bars that was not fresh. It tasted like I imagine the underside of a dock would taste like.

I had the sea urchin roe at the Jersey shore in Point Pleasant. It did indeed taste like dock scrapings. It must have been old stuff. Perhaps I'll try it again, somewhere else. If I can only forget...

As far as the milk, the barn may have been noisesome, but the dairymen that I knew and grew up with always kept their milking equipment clean and their product safe. If you've seen different, turn 'em in. The rest of the milk producers will appreciate help removing the liability.

I've mucked enough cow stalls that I don't mind the smell, though I have to admit that when you get down to that last layer of straw it sure can make your eyes water. A light whiff on the wind outside, though, is oddly comforting. Reminiscent of the sweet dispositions of the beasts, and perhaps a lingering reminder of my youth.

Best wishes,

Ah, Mary-

Artichokes!! We love them. Buy fresh and throw them in some boiling water and cook until they are very tender, the leaves pull out easily.

I love the base of the leaves dipped in salad dressing Annie's Goddess dressing is good (but salty), Drew's makes an excellent low sodium dressing even better is no salt butter.

Here's how to get the heart out. Let them drain and cool, then pull off as many leaves as you can without getting into the "choke" part, then take a teaspoon and scrape the choke off the heart. Save the leaves, of course, in a big bowl.

Then chunk up the hearts in whatever you like, salad dressing, oil and vinegar, or butter.

They are SO much better than canned tough things.

Here's a great dip for artichokes:

1/4 cup mayo
1 tablespoon no salt butter
2 teaspoons of lemon juice
1/4 teaspoon garlic powder

Melt butter, let cool slightly. Whisk butter and lemon juice, whisk in mayo & garlic powder. Refrigerate for an hour. Can be made ahead of time and will keep for a few days in fridge.

Can be served with hot or cold artichokes.

Also great for asparagus.

Anything eaten with garlic, butter, lemon and mayo is bound to taste great!
Think I'm crazy(I know you do)- in Gilroy Ca. they put garlic in ice cream
and it tastes wonderful.
GeeBee if you get near NW Ohio next spring, I 'll give you a bunch of my
"homegrown" asparagus. Ross can atest to the fact of how great it is.

I don't know that I've every had frozen scallops, but they're great fresh. When you go to Florida, you can catch them in the gulf. Use a knife to pry the shells apart, use your finger to remove the inedible parts, use the knife to cut out the muscle, the edible part. Cook and enjoy. It takes several hundred to make a meal, unless you're really hungry. Milk straight from the bulk tank tastes best.

Jim,
Fresh scallops are my favorite. When Bonnie, Ann, myself and Danny get together in Panama City, we'll make Danny go get us some!;) He can shell them and cook them too!;) ;) Unless you'd like to join us, and then you could show him the correct way of doing it!!

We're eating Mexican lasagna tonight; scallops tomorrow night.:)

That might be worth a trip in itself.:D :D ;)

OOOOOOOO YUUUUMMMM

you guys are making my mouth water at all this talk of food...

My hubby was bought up on a farm and is his own self-proclaimed expert on the healthiness of home-grown produce...

His mumma has a vegie patch and orchard as large as the average house-block and their cows provide the fertiliser :D They have the tastiest vegies and meats you have ever tasted... none of that store-bought stuff where tasteless fruit and vegies that have sat in cold storage for months on end...and yes they do their own meat too...the joys of a european up-bringing real natural food just like it was meant to be...the mediteranean diet is alive and well on their lil country property.

I think I need to send the boys out fishing tonight...
freshly caught fish is very tempting , a touch of lemon and youre ready to eat....

Yum - Sea Scallops

Yum - Sea Scallops

I buy the frozen ones at Sams or Costco - they are ok, fresh are better.

In Alaska, the Kodiak scallops are hockey puck size, I kid you not and they are delish!

The Ocean can keep its oysters, I can't eat them fresh - sometimes I eat them Rockefeller style, but they have to be very very well cooked

We tried the sea scallops night before last. They were very good. I would like to try the fresh, if the frozen are this tasty.
JimL says the fresh ones caught in the Gulf are wonderful. I wonder if Bonnie, Ann, and I can talk Gadgetman into going out and getting some when we all get together to visit.
I wonder if we lowered him into the water with a rope, if he could catch enough. . . .something to think about.;) ;) ;)

Yes, you would lower him into the water with a rope, but attach a bucket to the other end of the rope. The bucket floats on the surface of the water, while you dive down to pick up the scallops, swim up and put them in the bucket. He can quit when the bucket is full, or you can give him a second bucket to fill.

I'll jump right in here - Teresa will bring me down to P.C. for that day. We are really looking forward to meeting everyone and seeing Bonnie again.

As to scallops, Teresa might - she LOVES all kinds of fish. I can't do the cholesterol thing and fish (only those with backbones) are ok for me but not shellfish or those w/o a spine - HOWEVER, shrimp is one of my favorites and that day I WILL have shrimp - fried. Captain Anderson's is world renowned for its food and we should have a ball - at the table, and otherwise. And Danny, the others will expect you to jump right in on that bucket thing.;) :p

All righty then,

I ain't much of a seafood eater really. I do like catfish. Capt Anderson's better darn well have steaks/chicken or I'm a gonna be mighty hungry.  :p But I will a go and "scoop a scallop" just to please y'all ladies.:p :p I'll let Ann do it instead if I get to hold the rope. "Oh, the shark, babe, has such teeth, dear. And it shows them pearly white--------JAWS music playing the background". You CAN buy them at a store can't ya????????  And you better keep that bucket handy in case I eat one of them scallops by mistake.

And as for sushi bars:

We call thet bait down hyar!!!!!!!!:D :D

We used to go to the Crab Bars in Maryland for fresh crabs. You could always find me, I was the one eating chicken. We even caught them at the campground and they boiled them up right then and there. I used to laugh while I was watching them eat and wonder about the first guy that ate a Crab. I can just see him picking it up out of the water and saying, "Darn, that sure looks tasty!!!!!":D

Yeah right!!!!!

May God Bless,

Danny

yep, sushi is bait in these parts. Well, except for the coast where we have lots of oriental influence and all their other food is wonderful but you can keep the raw fish.

Danny, Capt Anderson's has got EVERYTHING. Not to worry about getting chicken, beef or most anything else.

They also have charter fishing trips (deep sea) and before they go out, they always have a prayer meeting and a short sermon. It is nearly required attendance if you are on board by the appointed time. The waitress might say the blessing before they let us eat. Or you can do it.

Danny-Boy,
You're going to be swimming with the fishies! Don't worry; Ann, Granbonny, and 'yours truly' will man that rope and pull you back up! We wouldn't let you stay down too long!! Unless you don't get the bucket filled up!!:p :p

All my kids are going to be along--plus my husband and son-in-law. After traveling 900+ miles together, I can promise you'll have plenty of help plucking those scallops off the bottom.:p :p :p

Mah eatin' prayers is usually mighty sho't.

God bless this hyar grub------dig in, Amen!!!

ah can sometimes git thet out in less than 2 seconds, dependin' on how hungry ah's. :D :D :D :D

And why does that "shark" song keep popping up in my head???????? Don't go NEAR the water----------You might eat things from there but there are THINGS in there that WILL EAT YOU!!!!:D :D :D :D :D Anyway, the thought of you three and my wife "womaning" the ropes doesn't put my mind at ease!!!!!!  :D :D GOD, I didn't know a guy could turn that BLUE!!!!!!!

May God Bless,

Danny (WHO YOU CALLING B O Y???)
