This is a common behavior among some animals to get away from
predators and while playing.

What is this behavior called?
What kind of animal or animals does this?
 
Hey Wise, good guess but it's wrong.

For Laurie and everyone else...... I'm afraid this is a dead give away.

Hint #1 When doing this behavior, they lift all four legs off the ground simultaneously

I was going to say "Displacement behavior" which is doing something comfortable but inappropriate when under stress but that doesn't match the four legs off the ground. Then I thought maybe it's "Playing dead" or "Playing Possum" as Wise suggested. But you said that wasn't it either. So my answer is.......
 
Stotting

Animals that do it are four-legged ungulates- like Pronghorn or gazelles

Stotting is the behavior and gazelles, cheetahs and pronghorns (antelopes) are the animals that use this strange leaping gait (jump).
