Does anyone know the amount of vitamin k in oriental food? Such as bean sprouts, bamboo sprouts. I know there is quite a bit in the soy sauce. I am going to search on the internet but thought I would ask here also just in case I don't find anything. I need to know.
Also how about water chestnuts. I generallly try to stick to the tried and true foods but get caught out sometimes. And we have to entertain clients at restaurants sometimes. They also invite us and sometimes I need to know about different foods.

Thanks.

Hi Missy,

Here's the info from the USDA Vitamin K database:

bamboo shoots 0.0 mcg in 1 cup canned
couldn't find bean sprouts but here's the info for alfalfa sprouts: 10.1 mcg in 1 cup
water chestnuts 0.3 mcg in 1 cup (canned)

Sure wouldn't worry about these - even the sprouts - that's a lot of sprouts!

And about the soy sauce, nowhere near as much as you may think. Soybeans yes, soy sauce, no. One cup of cooked Chinese cabbage has 57.4 mcg of Vitamin K as compared to one full spear of cooked broccoli which has approx. 52.2 mcg.

You probably have more to worry about from sodium in most Chinese foods than vitamin K.

So, go ahead & enjoy.

Cris
