one baked pie shell
layer pie shell with sliced ripe tomatoes
layer tomatoes with cooked, crumbled bacon (about 1/2 lb)
{my Jewish judge friend asked if turkey or chicken would do - yes, long as it's smoked (for that flavor)}
1/2 onion diced small
layer with cream cheese
layer with yellow cheese

bake in oven a few minutes, long enough to melt cheese.

Serve fresh from oven, cold from fridge, or room temp.

Think I'll tinker with it, see how it works with reduced-fat cheeses.... I'm addicted to maple-flavored bacon, and this would be absolutely wonderful....

Do you think it could be frozen after cooking?
 
I doubt tomatoes will freeze well and when thawed, they'd muck up the pie shell. But play around with your ingredients - it can be such a fun recipe that way. I might try sour cream instead of the cream cheese - or along with it.

I first found it at our grocery store in the deli section. Paid about 6 or 7 $ for it and then asked them how they made it. it's so simple to make and can be a standard company dish or just a quick supper at home.

I was thinking Mozzarell would be good and maybe a little fresh basil right before you serve
 
Sounds really good! Did you slice up the cream cheese to place it on the pie?

This sounds good, but I have a question. How well does the softened cream cheese "slather" over the crumbled bacon? I can see my clumsy self ending up with a ball of crumbled bacon/cream cheese. I guess if that happens I can serve the bacon cheese ball with crackers? ;)

well, cut it in chunks or melt down in microwave oven. It'll also melt in the oven as you are melting the top yellow cheese. But I like the sour cream, too.
