This is another favourite. You may need to check salt content on some of the sauces, but they are only used in relatively small amounts.

1 small lean fillet steak p/person
3 cups mixed salad greens or baby english spinach
1/2 lebanese cucumber
1/2 cup bean sprouts
1 cup of cherry tomatoes - halved
1/2 red bell pepper
2 spring onions (..not sure if this is the same in Oz as it is in US)
1/3 cup unsalted cashews
1/4 cup fresh mint
1/4 cup fresh corriander

Sauce:

2 tbsp fresh mint
2 tbsp fresh corriander
juice of 1 lime
2 tbsp sweet chilli sauce
1 tbsp oyster sauce (or fish sauce/stock)
1 tbsp water

Sear steak and cook until "medium". Set aside in a warm place to rest while remainder of dish is prepared.
Slice salad ingredients, finely chop herbs, and combine in large bowl.
Roast cashews in a v. hot oven for 3-5 min.
Mix sauce ingredients together (finely chop herbs).
Slice steak across the grain into thin strips.
Mix in with salad, pour over sauce and top with roasted cashews.

This can be eaten alone, or with rice or noodles (..I like the flat spinach flavoured noodles with this one..). You can also substitute grilled chicken breast in place of the steak.
 
Oops! Must have been having a Monday....

I forgot to put the following ingredients in the sauce mix for the Thai Beef Salad:

1 tsp of minced garlic (or 1 clove crushed)
1 tbsp white vinegar
