Hey,
just made this, literally took me 15-20 mins....pretty good too
1/2 8 oz jar of sundried tomatoes plus 3-4 tablespoons of their oil chopped up
1/2 large onion chopped
1 lg portabella mushroom chopped
12 shitake mushrooms sliced thin, stems removed
2-3 cloves garlic chopped
1 tablespoon italian seasoning
salt and pepper to taste
1/4-1/2 cup balsamic vinegar (to taste)
1/4 cup chicken stock or pasta water
1/4-1/2 cup EVOO
1 pound orzo boiled to al dente
in a lg skillet soften the onion in the tomato oil, add garlic and mushrooms, cook till mushrooms are soft, add the tomatoes and saute for 1-2 mins to soften, add the olive oil, and balsamic vinegar (I used about 1/2 cup of each) seasoning and chicken stock simmer for 2-3 minutes just to get them together, drain the pasta and add to the pan with all the ingredients, and cook for 3-5 mins, till all the liquid is absorbed
you can top with italian cheese if you like
