My friend just gave me a big spaghetti squash out of her garden and told me to do the following with it. I did - and it is really tasty.

Cut squash in half and clean out seeds. (either save 1/2 or cook both) Saute onions and bell peppers in some olive olive (and I threw in a little garlic too). Place sauted veggies into middle of squash and place cut side up on a tray in a 350 oven for ~40 minutes or so. Periodically, go in with a fork and begin shredding the inside of the squash and mixing it in with the veggie mixture. Remove when the squash is completely cooked. Salt and pepper to taste.

I like spaghetti squash and will give this a try ... we have used it as a sub for pasta, works for a while and then we have to get back with our pasta ... note: you can cook a bunch of spaghetti squash up and it freezes well.

Oh - I didn't know that Cooker. Do you shred the squash and just bag it? Or do you freeze the whole cooked squash?

I love squash. The unfortunate thing is that I love it best with lots of butter and brown sugar!
