This came out better than expected and I thought I'd share it.
I used the sherry because I was out of white zinfandel (which was non-alcoholic, the sherry was not)
Veggie rice
1 tbsp extra virgin olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
2 cloves minced garlic
1 tsp tumeric
1 fresh tomato, finely chopped
1/2 cup dry sherry, white zinfandel, or white grape juice
1/2 cup water
1/2 cup uncooked rice
Saute onion, carrot, celery, garlic, and tumeric in oil until soft over medium heat.
Add tomato and cook for two minutes, stirring occassionally.
Add sherry and water and bring to boil then add rice and boil for two minutes then simmer for about another ten until rice is cooked through.
Serve hot.
Makes about six servings.
