This came out better than expected and I thought I'd share it.

I used the sherry because I was out of white zinfandel (which was non-alcoholic, the sherry was not)

Veggie rice

1 tbsp extra virgin olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
2 cloves minced garlic
1 tsp tumeric
1 fresh tomato, finely chopped
1/2 cup dry sherry, white zinfandel, or white grape juice
1/2 cup water
1/2 cup uncooked rice


Saute onion, carrot, celery, garlic, and tumeric in oil until soft over medium heat.
Add tomato and cook for two minutes, stirring occassionally.
Add sherry and water and bring to boil then add rice and boil for two minutes then simmer for about another ten until rice is cooked through.
Serve hot.

Makes about six servings.



Family seemed to like it....
 
This really sounds good. Did you use minute rice? Did you use white or brown rice. I'm going to get the ingredients tomorrow and try it. I love rice fixed any way.
 
I used what I had which I think was just white rice....


It might be nice with a "fancier" rice.


I'm all for experimentation, that's how this came about. =)
