Insert pieces of fresh garlic and onion deep (and shallow) into a pork roast.

Massage kosher salt and black pepper all over roast. (Adjust salt idea to your diet.)

Place roast in crock pot. Add enough beef broth to come up the roast 1/4 way. I use low-sodium broth for this dish. Throw in some extra onion pieces.

Cook on high for around six hours. I don't know the amount of time for cooking on low. (I just made up the recipe today.) Cooking time will depend on size of roast.

The roast came out really tender and yummy!

That pork roast sounds great!!! I use my crock pot alot during the summer, its so hot in Az. you don't want to use the stove or oven.
You could probally use the left overs to make other dishes. :)

Yep ... That's a great way to cook pork!! ... I often put a pork butt in the crock pot add a little of my favorite BBQ sauce and let it cook away ... when it is done I chop it and remove as much fat as possible and the add more sauce to taste ... easiest way in the world to cook chopped BBQ:D

You can cook a pork roast on low in the crock pot for 10-12 hours. I'll sometimes put it in around 8 am and we eat relatively late - 6:30 and it is delicious...the meat just falls apart. There is a place in south Philly known for these pork sandwiches (Tony Lukes)...the roast pork, cooked greens, and sharp provolone on a good roll. They sell them at the Phillies games and are wonderful! I've been buying whole wheat rolls...makes it a little heart friendlier.
I have a pork roast in the freezer...I'l have to get it out! Thanks for the idea! I wonder how many points this is on WW? Just joined yesterday!

My ex bosses wife taught me that one. She'd bring in a slow cooker and set it all up before we opened and about 5 to 6 hours later, we were feasting on BBQ Pork sandwiches.
 
Hmm, I've got some no-salt BBQ sauce I haven't tried yet...and the ginger stir fry sauce would be yummy with that, too.
BTW, Donnamarie, lean pork is generally 1 pt per oz, and the onions and broth would be zero.
