I am sure a lot of you have heard of the Angel Food Cake mix and Pineapple cake. I just made a batch of cupcakes using the same ingredients and calculated some nutritional information.

Each cupcake is less than 90 calories (although relatively high in sugars).
Each has no fat and no cholesterol.
Each has about 160mg of sodium.

Recipe:

One box of Angel Food cake mix (the kind that requires only water to be addded).
One can of crushed pineapple. (I used the kind in syrup but you could use the kind in juice).
One teaspoon vanilla extract.

Preheat oven to 375 degrees.
Put liners into cupcake pans (you will be making 24 cupcakes).

Using a large bowl (the mix will expand), mix Angel Food mix, pineapple (do not drain), and vanilla. Using a rubber or silicone scraper, mix thoroughly (be sure and get to bottom of bowl) until all ingredients are moist. Do not use an electric mixer as it will mix more than is needed.

Fill each cupcake well to the top.

Bake for about 15 minutes or until top is golden brown and knife inserted in center comes out clean.

Cool on wire racks. Store at room temperature or refrigerate. Interestingly, refrigeration changes the flavor slightly.

Here's another one that should be heart healthy with canned pumpkin.

1 spice cake mix or you can use chocolate cake mix

1 15 oz. can canned pumpkin [ not pumpkin pie mix]


mix well, spray muffin tins with Pam. Bake 350 degrees for 10-12 mins. Enjoy.

delicious! You know what I would add to them, though, that of course would change them from no-fat to some fat - is I would add some fresh coconut. My mouth is watering right now. :) I have such a hard time staying away from sugar sometimes, especially when things sound as good as these cupcakes!!

The pumpkin cupcakes sound delicious also. I have SUCH a fetish for recipes and watching the food channel, although I rarely try a new recipe. I guess I "eat vicariously" through reading recipes and watching people cook. Unfortunately I also "gain weight vicariously." Ha.

I'm going to soon try both recipes! They sound delicious and some of my favoite flavors.

Christina, when I make toll house chocolate chip cookies I always set aside some of the batter before I put in the chips and nuts and instead mix a lot of coconut in before I bake them. I like them even better than the choc.chip cookies.

No measurements, the batter is only to hold the coconut together.
