There's a big ole dim-witted possum wandering around my yard at night.

I've been thinking about your possum pie. I'd really love the recipe. I will, of course, convert it to low sodium.

Also, could I substitute racoon, or chipmunks? I know that squirrels might be a little gamey.

Thanks a bunch

After you shoot him with your 12 gauge shot-gun..Clean and skin him..then par-boil until tender. Take out of water and put in bread pan.. then pepper to taste (notice. no salt:p ) Take 3 large sweet potatoes and boil until tender..Lay these around the possum in bread pan, put in oven bake until brown. Serve warm//Yummy.Maybe I should write a cookbook called Mountain Recipes:D bonnie

Nancy - sometimes the answer to a question is another question.
Do you shoot small possum, or do you bake big bread ?

How do you know it's a HE and not a SHE? Once, a mama possum climbed into a big old drum in our barn..climbed out and left for me to find..about a zillion little poss's:eek:  Needless to say, I just turned it over and waited for her to come back and get them:p :p Bonnie

Nancy - If you'll email Janie, she'll send you an Armadillo, then you can have possum on the half shell.

If Old :Blue: doesn't quit eating my Hostas every morning at my front door steps. You can have Venison on the hoof.:D Bonnie

You can't have hostas down South. That's a Northern plant. Can't kill them up here. They survive just about anything. I have to separate mine with an axe.
