I have been at 2.5 since 2005, and haven't had to change my dosage at all during that time. This month it went to 3.5. I think its because when I tested I had been taking a lot of cold medications, and I'm sure my diet was off. I don't think think the 3.5 is anything to be alarmed about, and I should retest after my cold is gone and the medications are out of my system.
Is my thinking correct?

Yeap. Personally, I'd rather be where you are now so that you can munch more Vit K things if you'd like, but that's just me.
 
Odds are that your cold and the meds have caused the INR increase. Should go back down when the meds are discontinued. 3.5 in no big deal. Like Ross, I prefer mine closer to 3.5, rather than 2.5. Eat a salad;).
 
Another possible contributor to your elevated INR is that with your Cold, you decreased your activity level, and therefore your metabolism has declined. A lower metabolism can lead to higher INR. As your activity level increases, your INR should come down (slowly most likely).
