Mexican Lasagna
3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast or ground turkey
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt/Pepper
8 (8 inch) spinach, sun dried tomato, cheese, or regular flour tortillas (I buy a package of all and mix them to make it colorful. You can freeze them and use when you need them.)
2 1/2 cups shredded Cheddar or shredded pepper jack or Mexican cheese mix
Jalapenos - as much as you like drained or fresh (I add them b/c my son & I LOVE them)

Preheat the oven to 400 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil ? twice around the pan. Add chicken or turkey and season with chili powder, cumin, and red onion. Brown the meat, 10 minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season to your taste.

Coat a baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 15-20 minutes until cheese is brown and bubbly.

Let sit 5-7 minutes and top with Fat Free or Low Fat sour cream and salsa. YUMMY!

This sounds somewhat like a weight watchers recipe I have called layered mexican chicken casserole, or something like that. I would be interested in the nutritional information for your recipe, if you have it, as I'd like to try it.

I hope to actually cook this one, though. You could make this low-salt very easily.

I'm going to try this one.
I've been so bored with what I'm having to eat, but I'm trying to stick with it.
This casserole will fit into my weekly menu.
I will have to make a substitution for the cheese due to sodium restrictions, but I probably can find something.
 
Mary, if you to www.alpinelace.com and check under "products" you'll see they have reduced sodium cheeses. We're able to buy some of these at Schnuck's, so you might be able to get them in Missouri, too. They're excellent cheeses.

I am not sure what it is, but it is low fat and low cal except for the tortillas and cheese. You can buy low fat tortillas and cheese to use in it. I have used skim milk shredded mozerella before and whole wheat flat pita bread too. That would cut some calories also. I use alot of seasonings too, like added fresh cilantro and cumin sometimes to add to it. You can switch it up as much as you like. You could also use beef, but we don't do beef. hehe!

Dinah---I know this is under Codeman, but I am on my hubby's laptop tonight....I left mine at work and didn't go in today b/c it snowed here in Arkansas...hehe! Everything shuts down when it snows!!
 
Dinah - we were visiting my daughter in Little Rock a couple of years ago during the Big Valentine's Day Snowstorm. OMG! 4.5 inches and the city LITERALLY shut down - the streets closed, all the stores and restaurants and even the churches were closed on Sunday morning. The lobby of our motel was full of people who simply had no where to go and there weren't anymore rooms available.

It was an experience.
