I just "invented" this for a picnic we're attending tomorrow.

2 cups whole wheat cous cous
2 cups chicken broth
2 cups fresh salsa (I purchased mine at Trader Joe's)
1 can black beans drained and rinsed
1 can corn drained
1 cup chopped cilantro

I used the broth and cooked the cous cous according to package directions. After the cous cous was cooled, I just dumped in everything else and mixed well.

Even though the salsa already had cilantro - I added more because I LOVE cilantro!

I'm refrigerating it and will serve it cold. I'm also going to bring along a bottle of hot sauce in case anyone wants to pep it up a little more.
 
My sis-in-law had a baby shower for her granddaughter a few weeks ago, & she made a dessert with cous cous that was absolutely delicious. She put pineapple, nuts, & I think even raisins.

I'll have to ask her for that recipe. That was the first time I had eaten cous cous.
