How often to check INR if eating more Kale/greens and compromised liver functions?

I have been diagnosed with anemia and I am heading into a MVR redo surgery. Also, my MS is compromising my liver functions and thus my coumidan has a tendancy to go crazy every once in a while. I am introducing kale, collard greens, spinish into my diet to improve vitamins and anemia and while I eat very little of them and very little in general (about one and a half times a day oatmeal and then some small dinner) how often should I have INR checked? At the FL CCF they set it for 2 times a week but my regular doctors/visiting nurse wont do it more often than once a week. How often does it change? How dangerious is the kale etc. that I am eating to my INR, risk of PE and overall stability?

If I am changing my diet, I usually test every 4 or 5 days. However, I home test so that is easy. I think once a week should be okay as long as you get the results immediately.
 
Testing more then 2 times a week is ridiculous and means nothing. It takes warfarin 3 days to show in a test. There are only 7 days in a week. See where I'm leading?
 
If he's eating more then usual Kale and Spinich, his INR will go down, but by how much? Just depends.
