Would like some fish recipes.
We have a great grocery store here in Fort Worth that's on my way home from work. It's called Central Market, an upscale version of the HEB grocery chain out of San Antonio. Lots of fresh fish every day.
Last week I got some tilapia (sp). Pan-sauteed it in a little butter/olive oil, added lemon juice and grated lemon peel. It was pretty good. Didn't follow any recipe.

Would like some other ways to cook fish without frying -- poaching, grilling, broiling, pan-sauteeing. Would even attempt doing fish en papillotte (sp?), in parchment paper.

Grilled Salmon

This is pretty easy. It works well with any large filet of fish.

You will need:

1 large salmon filet (skin left on one side of the fish)
Unsalted butter
A mixture of dried herbs-(such as dill, rosemary, oregano, etc.) whatever you like


While your grill is heating (we use a gas grill): Place fish skin-side down on a large sheet of aluminum foil. Dot fish with butter. Sprinkle fish liberally with herbs. Completely wrap fish with foil. Place fish skin side down on the grill. (It's helpful to have a grill pan) Grill for about 15 minutes. Fish is done when it flakes easily.
You should be able to remove the fish from the skin with little effort.

My husband and I like to bass fish and we've found that this is the best way to prepare bass without frying!

Ingredients:

Enough fish to feed your family (bones removed)
1 or 2 eggs
Flour
Italian Style bread crumbs
Grated Parmesan cheese

Beat eggs. Dip fish filets in beaten egg. Dredge fish in flour. Pour bread crumbs and approx. a 1/4 cup of parmesan cheese into a ziploc bag. Drop fish in and shake to coat with crumbs. Spray a baking dish with non-stick spray. Pop fish in at 350 degrees and bake approx. 20 minutes. This is great with smoked gouda cheese grits...All of you southerners know about cheese grits and fish!
 
THat tilapia fish is pretty good stuff. My dad found a bunch of it frozen for pretty cheap and it's real low sodium too. Fish in general has all kinds of good things in it like antioxidents and other nutrients which are good for heart health.

This is a recipe from the No-Salt, Lowest Sodium Cookbook by Donald Gazzaniga that I've done a lot and like...

Fish with potatoes and garlic

- four 4oz white fish steaks, swordfish, halibut, bass, cod, sole, turbot (I've used the cod and the tilapia)

- 2 tsp no salt added mustard (you can order this from the healthy heart market website ( http://www.healthyheartmarket.com/ ) or try finding the lowest sodium content mustard at your local grocery store.

- 3 tbsp lemon juice
- 2 pounds unpeeled red potatos
- 4 cloves crushed garlic (I've used minced, it's easier)
- 2 tbsp extra vergin olive oil
- black pepper to taste
- 1 medium tomato, sliced

Marinate fish in small bowl with mixeture of mustard and lemon juice, cover and refrigerate until ready to cook.
Cut potatoes either into thin slices or in quarters (I went eighths). Place potatoes in greased (Pam cooking spray's good) roasting pan. Combine garlic, oil, and pepper and pour evenly over potatoes. Depending on the size of your pan, I've discovered it's best to double up the ingredients going over the potatoes.
Preheat oven to 450º and bake potatoes for about 30 minutes or until they start to brown, turning at least once during cooking. When ready, place fish fillets, mustard side up on top and bake for another 15 minutes (or until fish is slightly cooked, but still moist) top fish with tomato slices and more lemon juice then bake another 5 to 10 minutes (until fish is white and flaky)


Good stuff.


I'm finding with this Gazzaniga cookbook a few ofthe recipes need tweaking. I know white kidney beans do NOT belong in minestrone soup and the order for making his fettuchini alfredo is all out of whack, but for the most part it's pretty good.
