Just served this to the "reluctant" teens tonight, and they actually liked it.
Slice cantaloupe into thin wedges and arrange on a lettuce-lined plate. (Check your INR first )
Top with chicken breast slices or chunks. (Used my Foreman Grill)
Sprinkle with toasted walnut pieces and sliced red onion slivers.
Top with special dressing -- equal parts vanilla yogurt and a reduced fat Italian dressing (This is so much better than it sounds!)
