After surgery, most of the time, the patient is on lots of medicine, pain medicine and heart medicines, plus some of the anesthesia hangs around in your body for a little while. It is quite normal for there to be personality changes which are reversible, an altered sense of taste and I guess it would follow, a sense of smell. Foods don't taste the same or smell the same.
It's also possible that your dad is having some reaction to one of the meds.
I would take it up with the surgeon, or cardiologist. They expect some calls after surgery, so don't be shy about calling. Maybe, all it needs is a little time, or maybe a change in meds, but let the doc. tell you. I think it's important to call them, don't let your father try to "tough it out", he's got other things to do with his time, like heal and get better. They'll straighten him out in good fashion.
