Joe likes very spicy things to take the place of the sodium. They're too hot most of the time for me, but he loves it.

Here's a Tomatillo Salsa which will make your eyes cross.

10 Tomatillos
1 small onion, cut up
3 cloves garlic cut up
2 Habanero peppers I leave the seeds in (jalapenos, if you're faint of heart, or bell peppers is you're a total wimp, LOL)
1/4 cup chopped cilantro

Put tomatillos in a non-reactive saucepan and simmer in water until soft and the skin bursts. Drain and put everything into the food processor and process until your desired texture. Refirgerate. Joe uses this with no salt potato chips for a dip, or on fried jalapeno and cheese baked cornmeal for breakfast, or on his eggs, etc.

Call "fyrfytr" to hose you down.
 
Nancy, the salsa recipe sounds like a dandy one. I bet it would go great on the low salt corn chips I eat. Eggs ? Joe still eats eggs? I may have one to celebrate when I lose another ten pounds. I think I had one in January.
 
So far, Joe's coronary arteries are OK. He's kinda skinny, so he needs that extra calories.

It'd be great with corn chips (low sodium)

When I have a few minutes, I'll post a recipe for the baked cornmeal with jalapenas and cheese (Lorraine cheese, it has minimal sodium). Makes an interesting breakfast, brunch or lunch.

Your recipe is almost identical to mine except I use Serrano peppers. Habeneros are by far hotter! I use the Serrano which to me are hotter, than the Jalapenos. Weird ,but to me there is something about the tecture and taste of Jalapenos that I don't care for. I love and make hot food all the time. My diet has been along those lines since I was 21. I always have to have either salsa or green sauce to accompany my food. I don't have clogged arteries and I believe it's because I have eaten peppers in some form, on a daily basis since I was 21.

Yes Ross, I still have a lining in my stomach too! :D I know you asked Nancy that question about Joe, so before you asked me I was going to tell you I don't have any stomach problems, well except for it not being flat!:D :D
 
I asked Joe how he liked the salsa, he said it was just right, LOL. He told me that someone brought back some salsa from Mexico one time, and it was so hot, even he had a tough time. But he liked it, nevertheless.

In our area, we have a large population of Italian Americans who have been here for generations. They have hot pepper eating contests. So it's definitely a multi-cultural thing.

Red pepper flakes is always on the table for Joe. He's gotta do something. Low sodium is no fun.
 
I use the crushed red pepper a lot too. I put it on my eggs in the morning and also on Pizza! I've also made Chicken in the crock pot and would sprinkle the crushed red pepper all over the chicken. It taste great! Again, thats only if you like the hot stuff!:D

I lived in Mexico for six months with my first husband. He was an Aztec Mexican Indian. We stayed with his family and I learned to make and like a lot of mexican dishes. Some were hot and some were not. They all tasted great. My mother-in-law introduced me to the mexican cuisine slowly. I acquired such a taste for the different sauces, salsa, cilantro, real home made tamales which I can make quite proficiently from scratch, thank you! I learned a whole different culture when I was 21 and never forgot it. I make a greeen mole sauce all the time that all my friends and family love.

I would say Joe is very smart. Just because he has to have low sodium, doesn't mean it has to be bland! He has the right idea! Spice it up! ;)
 
Hi Lorraine-

How's about you post a couple of your mexican dishes. I'll convert them to low sodium. We'd love them, I'm sure. I'd especially like recipes for flour and corn tortillas. I have to make all that stuff from scratch. But I have the time and don't mind.

Yahoo Janie! That stuff looks great. I bought some 'chili fixins' when we were in SAT. It was the best! In a firecracker package. If you think about it.......try to find out what it is so I can order!
