I have been asked to post the above two recipes which I have tried and liked very much. Please bear in mind these recipes are from the book of Recipes of Vita-Mix Blender. I am not sure what results you might get if you use regular blenders and please use your personal blenders "on your own risk"!!

I am still curious to know how these come out using your blenders. Let me, kindly, know.

Hot Broccoli Cheese Soup
I doubled the amount making it enough for 4 people...appetizer size!

1 cup skim or low fat milk
1/3 c (40g) shredded, low fat cheddar cheese (I personally used
the Monterey Jack Pepper Cheddar cheese as hubby loves its spices)
1 c (100g) chopped fresh or frozen broccoli or cauliflower florets, Steamed (I did not steam)
1 teaspoon diced raw onion (I used 1 tablespoon... we all love onions)
1 teaspoon cornstarch
1/4 teaspoon chicken or vegetable bouillon or soup base

1. Place all ingredients into the Vita-Mix container in the order listed
and secure lid.
2. Select variable 1 (which is the lowest speed)
3. Turn machine on and quicily increase speed to Variable 10 (The
highest variable speed),
4. then to to High (which is double the highest variable)
5. Blend for 5-6 minutes or until heavy steam escapes from the vented lid.

(the high speed and high friction and high wattage and Horsepower of the Vitamix heats up the liquid).

Yields 2 cup. per 1 cup serving: 112 cals.; 12 g protein; 2 g total fat; 1 g sat. fat; 12 g carb.; 1 g fiber; 1 g sugar; 291 mg Calcium, 1mg iron; 228 mg sodium, 581 IU Vit. A; 49 mg Vit. C; 7 mg Cholesterol.

Triple Berry Smoothie


1/2 c water
1/4 cup low fat vanilla yogurt (I used Vanilla soymilk)
1/2 c frozen unsweetened strawberries
1/2 c frozen unsweetened blueberries
1/2 c frozen unsweetened rasberries

1. place all ingredients into the Vita-Mix container in the order listed and secure lid
2. select variable 1.
3. turn machine on and quickly increase speed to variable 10, then to high.
4. blend for 90 seconds or until desired consistency is reached.

Yields 1 1/2 cups. Note: I personally do not measure, just add milk or berries as needed!

per 1 cup: 110 cals.; 3 g protein; 1 g total fat; 24 g carbs; 16 g sugar; 87 mg calcium; 30 mg sodium; 141 IU vit. A; 42 mg vit. C, 2mg cholesterol.

Note: I use whatever fruits I have, fresh or frozen...

My favorite own recipe using the regular blender before buying this vitamix was and still is: any fruits I have in the fridge or freezer, mix them with vanilla soymilk, frozen concentrated orange juice, and a banana...blend until well mixed...Bon appetit. I love it.
 
That soup recipe sounds delicious! I've never heard of a blender like yours. That might be the one I saw mentioned in the title of a Small Talk forum?

You mentioned regular blenders; if I don't put my pesto ingredients in exactly right, the shaved parmesan bogs down, gets heated up, and the pesto wants to turn into a large green heated blob :eek: .

So I would guess that my blender wouldn't do very well with your broccoli soup recipe either. But I think I could use your ingredients, do some selective blending, and eventually come up with something comparable in my dutch oven. Though it could be hours later ;) .
 
Oh boy, the recipes sound yummy! :)

I have an almost new food processor that I bought just last year so I am going to try making these two recipes in it & see how they come out.

I will let you know the results when I make them.

We have one of these blenders and that soup is delicious. Smoothies and soup made in the blender are my husband's idea of cooking. I have to admit though, he makes a great smoothie.
 
after mushroom soup, broccolli soup is my favorite. discovered it in a restaurant in Orlando, freshly made. they served it with croutons and occasionally I treat me again....
